What is sushi?
Many people think that sushi is raw fish. It’s not! Raw fish is called shashimi. Sushi is food that uses rice seasoned with rice vinegar. Raw fish is one of the most popular ingredients in sushi dishes but vegetables, cooked seafood or other ingredients can be used in sushi.
Other sushi terms:
Maki: Sushi rolls (rice!) wrapped in a layer of Nori-seaweed (usually wrapped around a choice of fish such as tuna) Most Maki-sushi places the seaweed on the outside but some (like the California Roll) place the sushi rice on the outside!
Nigiri: Hard pressed mounds of sushi rice with a dab of wasabi and choice of ingredient on top (often tuna, salmon or shellfish)
Sashimi: raw fish, served chilled, sliced and arranged without rice
