Gran’s Roasted Peppers: RECIPE BY FRANCK DANGEREUX
Make sure you have a lot of delicious bread to mop those amazing juices
- 4 red peppers
- 4 garlic cloves, peeled
- 8 very ripe tomatoes, peeled and deseeded
- 100ml olive oil
- 16 very good quality anchovy fillets, drained
- Salt and pepper
- 24 basil leaves
Split the peppers in half lengthwise and remove the cores and seeds, season the inside with salt and pepper. Slice each garlic clove thinly & distribute between the 4 peppers. Place 3 basil leaves and 1 tomato inside each pepper half, season with a little salt & pepper. Place in a roasting pan and pour the olive oil over each pepper. Roast in preheated oven (220˚C) for 20 min, then lower the temperature to 170˚C and cook a further 45 min. The edges of the peppers must be slightly burnt and a little collapsed. Remove from oven; allow to cool to body temp before topping each half of the pepper with 2 anchovy fillets. Serve drizzled with the roasting juices.
